Raphael Sirtoli is the chief scientific officer of Clínica Pêro, a medical clinic focused on root cause medicine in Lisbon, Portugal. Raphael has an MSc in molecular biology and was a PhD candidate in neuroscience. He also writes and consults for ZeroAcreFarms, a company selling a fermented oil low in omega-6 linoleic acid and high in oleic acid. He is the co-founder of Nutria, which makes a food-tracking app focused on diet quality. His interest in health and wellness has led him to the study of other fields such as paleoanthropology, clinical medicine, epidemiology, biochemistry, endocrinology, and immunology.

In this conversation, Dr. Brian and Raphael talk about why seed oils are so unhealthy, how seed oil can be processed in such a way that it is less unhealthy, high levels of carcinogens and toxins in baby formula, how big food companies work hard to make people eat food that is not nourishing, why keeping your body’s microbiome healthy is key to good health, the Wim Hof breathing technique, how temperature changes and other environmental factors can effect things like insulin resistance, incretin affecting drugs, the role that muscle mass plays in metabolic health, fasting and metabolic health, and the value of trying to understand some level of medical science to assist you on your health journey.
